Lockdown Pressure Cooker Pizza [No Oven, No Cheese, No Yeast]

Pizza can look posh. But it need not be complicated to make.

That too, when you don’t have the fancy ingredients (blame it on the lockdown) here’s how to make a pizza and enjoy it too!

You don’t need cheese, or yeast or even oven to bake this yummy pizza.

Here’s the recipe!

Lockdown Pressure Cooker Pizza Ingredients

For the dough:

Maida / All purpose flour – 1/2 cup + 2 tablespoons

Curd/Yoghurt – 2 1/2 tablespoons

Baking soda – 1/2 teaspoon

Salt – 1/4 teaspoon

Sugar – 1/2 teaspoon

Ghee – 2 teaspoons

For the red pizza sauce:

Onion – 1 small sized

Tomato – 1 small sized

Ginger – 1/2 inch piece

Garlic – 3 cloves

Chilli powder – 1/2 teaspoon

Sugar – 1/2 teaspoon

Water – 1/2 cup

Oil – 2 tablespoons

For the white sauce:

Butter – 2 Tablespoons

Maida / White flour – 1 1/2 tablespoons

Milk – 1/2 cup

For the Pizza

Veggies of your choice – In this recipe, I have used sweet corn, onions, capsicum

Chilli flakes

Oregano (optional)

Recipe for Pressure Cooker Pizza without yeast, and cheese

Let’s make the pizza dough first. In a bowl, take 1/2 cup + 2 tablespoons maida. To this, add 1/2 teaspoon baking soda, 1/4 teaspoon salt, 1/2 teaspoon sugar and mix well.

Add 2 teaspoons ghee, and 2 1/2 tablespoons yoghurt and mix.

Start kneading and make smooth dough. Add about 1/2 tablespoon of water, if needed.

Cover and let the dough rest for about an hour.

Now, its time to make the red pizza sauce.

In a pan, add roughly chopped onions and tomato, ginger and garlic cloves along with 1/2 cup water.

Cover and cook for about 5-7 minutes.

Once cooled, grind and make a paste.

In a pan, heat 2 tablespoons oil and add little of the ground mixture. Add 1/2 teaspoon chilli powder and mix.

Add in the rest of the paste + 1/2 cup water used to rinse the mixer jar.

Add 1/2 teaspoon sugar and cook until the sauce thickens. Set aside.

Now its time to make the white sauce.

In a pan, melt 2 tablespoons of butter. Add 1 1/2 tablespoons maida. Mix well.

Add 1/2 cup milk and cook until you get sauce consistency. Set aside.

If the time is up, take the pizza dough and knead for a minute. Roll for about the size of a medium pizza.

Place it in a pizza pan or a plate that you can use to bake.

Spread the red sauce over the pizza base evenly and generously.

Over the red sauce, spread the white sauce.

Place the veggies of your choice over the white sauce. Sprinkle some chilli flakes.

Optionally, sprinkle some oregano.

Pour 2 cups water in a wide bottomed pressure cooker. Place a vessel in water and place the pizza pan/plate over the vessel.

Put some butter in few places along the sides of the pizza pan.

Close the cooker without gasket and whistle on the lid and cook in low flame (sim) for 35-40 mins.

Open the cooker, wait for two mins and enjoy your pizza!
