Pressure cooker cheese Pizza recipe

In a wide vessel, take 1/2 cup + 3 tablespoons maida/white flour/all purpose flour.

Add in 1/2 teaspoon baking soda, 3/4 tablespoon sugar, 1/4 teaspoon salt and mix well with a spoon.

Now add 2 teaspoons ghee and 2 1/2 tablespoons curd. Mix with hand and knead to a soft dough.

Add in 1 tablespoon water to start with. When the dough gets to a one piece form, add in 1 tablespoon cooking oil and knead well.

Cover and let it rest for at least an hour. I let it rest for 2/5 hours.

Meanwhile we can make the Pizza sauce.

In a pan, add 1/2 cup water. Add in 1/2 inch piece ginger, 4 garlic cloves, a small sized onion and a small sized tomato, roughly chopped.

Cover and cook this for 5-7 minutes in medium flame.

Once cooled, remove the ginger piece and grind it to a fine paste.

In a pan, heat 2 tablespoons oil. Add some of the ground paste and 1/2 teaspoon chilli powder and fry for a minute.

Add in the rest of the paste + 1/2 cup water used to rinse the mixer jar.

Add a pinch of salt and 1/2 tablespoon sugar and keep stirring.

Half way through, add in 3 tablespoons of ketchup and keep cooking.

Cook until it gets to a thick consistency.

After the dough has rested enough, dust the pizza pan/plate with some flour.

Roll the dough in between your hands to make a nice sphere. Place it in the pizza pan and spread it with your hands.

Spread the dough evenly to fill all of the pizza pan. Work with your fingers on the edges as shown in the video.

Take a fork and make dots all over as shown in the video.

Now, spread the pizza sauce evenly over the pizza. And then top it with vegetables of your chouce.

In this recipe I’ve used onion, capsicum, tomato, sweet corn.

Then add about 200 gms of grated cheese of your choice.

Now, take a wide bottomed pressure cooker and add 2 cups water in it.

Place a vessel in water and then place the pizza pan on top of the vessel.

Cover with cooker lid with no gasket and no weight. Cook in sim for 40 minutes.

Open, wait for 2 minutes for the Pizza to settle, and enjoy!
